Vegatable soup

Ingredients
Serves: 3
1 chopped onion
1 stick of chopped celery
1/2 a leek chopped
1 potato diced
1 vegetable stock cube
a little oil
a pinch of salt
Method
Put all the ingredients into a pot with enough water to cover the ingredients. Bring to boil and then turn down the heat so the soup cooks gently for about 30 minutes. Test the vegetables to ensure they are cooked through, add salt and pepper to taste.
