Simple Onion Soup

Ingredients

Serves: 2


2 large onions, peeled

stock (amount varies depending on preference)

1 tablespoon of butter and a splash of oil

bread

cheese


Method

  • First thinly slice the onions. As you do this, melt the butter in a pot, and add the onion as you chop them. Stir the onions frequently until they soften.

  • Add enough stock to cover the onions then cook for about 10 minutes stirring to ensure the soup moves and cooks evenly and until all of the onion pieces are soft.

  • If you want to make it in to French Onion soup, toast a slice of bread and grate cheese on to it then toast it until it is bubbling and golden. Place this carefully on top of your soup, it will break down in the soup and then you can enjoy all the flavours!

Enjoy! This is my favourite soup to make and takes about 20 minutes from picking up an onion!
